The Flavor Profile
An otherworldly cup of milk chocolate, dark blackberry, and ripe tangerine.
This year, we are proud to once again offer the SL28 varietal harvested during a recent solar eclipse, earning the name Black Moon Process.
Once harvested, the coffee cherries rest in the shade for three days in specially designed boxes, then they are de-pulped, removing the coffee seeds to be washed before they complete a 48-hour fermentation in water. The final drying is done under the sun on raised beds.
This is a pre-order coffee. All orders with Sumava De Lourdes in cart will start shipping on 10/22/26.
An otherworldly cup of milk chocolate, dark blackberry, and ripe tangerine.
This Black Moon Process lot begins with an SL-28 Kenyan variety cherry harvested at peak ripeness, transported in perforated crates, and rested in the shade. During this rest, the pergamino slowly absorbs the sugars from the cherry for up to three-days. After the cherries are depulped, the pergamino is removed, washed, and put into a tank for a 48-hour fermentation. The final step is careful solar drying atop raised beds stretched across the hills overlooking Costa Rica’s beautiful West Valley. The Black Moon Process produces an otherworldly cup like no other with notes of milk chocolate, dark blackberry, and ripe tangerine.
“I am proud and thankful to see how specialty coffee produces purpose in my day-to-day. Sumava is a nest of peace and natural harmony, with chilly mornings and evenings, beautiful views of the Pacific Ocean and Central Valley, sounds of birds and the wind dancing with the cypress trees. Thank you dear Stumptown enthusiast, thank you for celebrating our Black Moon batch, produced and processed with love, passion, and dedication!”
