How to Brew Coffee with an Origami

This brewer is the definition of sharp elegance, but don't let its modern look fool you; the Origami Dripper's roots run 400 years deep in Japan's Gifu region. Crafted from Minoware clay, its design, while beautiful, isn't just for show. The 20 sharp folds ensure even airflow, and the high-density clay holds heat steady for a clean, balanced cup every time.

What You Need

21g (3 Tablespoons) of Stumptown coffee

Hot water just off the boil (about 205°F)

Spoon

Timer

Optional: Brewing carafe

Prep and preheat

Fill your kettle with filtered water and heat to just off-the-boil. Place the Origami holder on top of a carafe or mug, put the Origami in the holder, and add a filter. Rinse with hot water to preheat and remove any papery flavor from the filter, then pour out the rinse water.

Measure and Grind

Measure out 21g (about 3 Tablespoons) of your favorite Stumptown coffee and grind it medium-fine like sea salt. Add the coffee to the filter, shaking it gently to level the grounds. Zero your scale if using.

Saturate grounds

Start a count-up timer when you add the hot water. Saturate the dry grounds completely with 50g of water in the first 10 seconds and allow it to bloom. Stir to make sure there are no dry grounds.

Second pour

At 0:45, pour water up to 200g in a spiral motion by 1:00. The spiral motion helps give you an even extraction and keeps everything integrated.

Third Pour

At 1:30, add more water to 280g.

Final Pour and Drain Dry

At 2:00, add water to reach 340g, making sure to saturate any grounds stuck around the filter with the start of your pour. Allow the coffee to fully drain, which should finish between 3:00-3:15.

Serve and Enjoy

Remove the Origami and holder from the carafe or mug and serve!
